There are two common types of salt —  sea salt and table salt, each differing significantly in their sources, processing methods, textures, flavors, and iodine content. Source & Processing Methods:

Sea salt originates from the evaporation of seawater — either through solar evaporation or by heating. This process leaves behind salt crystals, which are then carefully harvested, retaining the essence of the ocean within them. Table salt, on the other hands, often originates from underground salt deposits — requiring mining operations. This salt type undergoes extensive processing, involving purifications to remove impurities, sometimes bleaching to achieve a white color, and the addition of anti-caking agents to prevent clumping.

Texture & Flavor Profile:

The noticeable difference between sea salt and table salt lies in their texture. Sea salt typically has larger, coarser grains, offering a crunchy texture.  Table salt undergoes a grinding process, resulting in a fine, uniform in texture that dissolves effortlessly into dishes. This textural variation can influence how each salt disperses and interacts with food. 
Beyond texture, their flavor profiles of sea salt and table salt diverge due to their distinct mineral composition. Sea salt contains various minerals from seawater, imparting a more complex flavor profile that can vary depending on its origin. This complexity allows sea salt to enhance dishes with layers of taste, ranging from subtle sweetness to briny richness. Table salt offers a more straightforward saltiness dominated by sodium chloride. As most minerals are stripped away during processing, it has a sharper, more intense saltiness, serving as a potent seasoning agent.

Iodine Content:

An essential consideration, especially for health-conscious consumers, is the iodine content present in salt.  Historically, iodine deficiency posed a significant public health concern, leading to thyroid disorders and other ailments. To address this issue, many table salts are iodized during processing, ensuring a reliable source of this vital micronutrient. However, sea salt typically lacks iodine unless deliberately added during processing.
 
So, while both sea salt and table salt serve as essential seasoning, they possess distinct characteristics that cater to different culinary preferences and needs. Sea salt offers a more natural, less processed option with a nuanced flavor profile, whereas table salt provides uniformity and iodine supplementation. Ultimately, the choice between the two depends on individual taste preferences, dietary considerations, and culinary applications.
